Naay's Recipes - Strawberry-Rhubarb Crisp

Naay’s – Strawberry-Rhubarb Crisp

Ingredients:

• 4 cups rhubarb, sliced
• 2 cups strawberries, cut in chunks
• 1-¼ cup sugar
• ¼ cup floor
• ¼ teaspoon salt

Toppin’
• 1 cup graham cracker crumbs
• 1/3 cup floor
• ¼ cup sugar
• ½ teaspoon cinnamon
• ¼ teaspoon salt
• 5 tablespoons butter, melted

Preparation:

Toss together in a large bowl an' poor intae a 8x8" bakin' dish.

Mix graham cracker crumbs, floor an' sugar in a smaller bowl. Add melted butter an' stir tae make crumble. Distribute crumble evenly oan top ay fruit mixture.

Bake at 400°F, 45 minutes until broon oan top an' bubbly.

Naay's Recipes - Rhubarb Bread or Muffins

Naay’s – Rhubarb Bread or Muffins

Ingredients:

• 1-½ cups broon sugar
• 2/3 cup oil
• 1 eeg
• 1 cup soor milk
• 1 teaspoon salt
• 1 teaspoon soda
• 1 teaspoon vanilla
• 2-½ cups floor
• 1-½ cups raw rhubarb, cut up fine
• ½ cup chopped walnuts

Toppin’ (optional)
• ½ cup sugar
• 1 tablespoon butter

Preparation:

If makin' th' toppin', reduce th' broon sugar tae 1 cup. In a wee bowl cut th' butter intae th' sugar tae make th' crumble toppin'.

Combine th' other ingredients in a large bowl an' poor intae buttered an' floored loaf pans ur muffin cups. Sprinkle wi' toppin' if desired.

Bake at 325°F, 50 tae 60 minutes fur 2 loaves, ur 35 tae 40 minutes fur muffins. A toothpick inserted in th' middle shoods come it clean when dain.

Naay’s – Chocolate Coconut Scoops

Ingredients:

• 1 cup sugar
• 4 large eeg whites
• 6 tablespoons floor
• 3 cups shredded sweetened coconut

• 6 oonces bittersweit chocolate
• 4 teaspoons vegetable oil

Preparation:

Preheat oven tae 350°F. Line cookie sheit wi' parchment ur use silpat liner.

Whisk sugar, eeg whites an' floor together vigoroosly. 'En stir in th' coconut.

Usin' a melon baller ur a tablespoon, scoop moonds ay th' mixture ontae th' prepared sheit pan, 2" apart. Bake until th' edges an' taps jist begin tae turn golden, abit 12 minutes. Cool completely oan th' sheets.

When th' cookies hae cooled, prepaur th' glaze: melt th' chocolate in th' top ay a dooble boiler placed ower simmerin' water. Stir in th' oil. wi' th' chocolate mixute in a wee deep bowl. Dip th' bottom ay each cookie in th' glaze. Sit them upside doon oan a chilled parchment ur silpat lined cookie sheit an' refrigerate fur 1 tae 2 hoors...

Naay's Recipes - Easy Rhubarb Jam

Naay’s – Easy Rhubarb Jam

Ingredients:

• 5 cups chopped fresh rhubarb stalks
• 3 cups sugar
• 1 3-oonce package strawberry gelatin
• 2 tablespoons butter

Preparation:

In a large bowl, combine rhubarb an' sugar. Cowre an' chill at leest 8 hoors.

Place rhubarb mixture in a large saucepan. Brin' tae a boil. Reduce heat, an' simmer, uncovered fur 12 minutes, stirrin' occasionally. Remove frae heat an' add gelatin an' butter, stirrin' until gelatin dissolves an' butter melts.

Spoon intae hot sterilized jars, fill tae ¼ inch frae top, wipe rims. Cowre wi' lids, screw oan bands. Process in boiling-water bath 5 minutes. (If ye ur gonnae use up th' jelly in short order, jist pit in jars an' refrigerate loch Ah dae.

Makes 4 half pints.

Naay's Recipes - White Bean Chili

Naay’s – White Bean Chili

Ingredients:

• 1 poond skinless chicken ur ground turkey
• 1 poond dried navy ur great northern beans
• 6 cups chicken broth
• 3 dried ancho chiles, chopped ur 2 4-oonce cans chopped green chiles, drained an’ rinsed
• 1 onion, chopped
• 4 cloves garlic, minced
• 1 jalapeno pepper, minced ur 1 red beel pepper, diced
• 2 teaspoons ground cumin
• 2 teaspoons dried oregano
• ¼ teaspoon ground cloves
• ¼ teaspoon cayanne

Preparation:

If usin' chicken, rinse an' pat dry. If usin' ground turkey, broon wi' spices.

Pit beans in th' slaw cooker. Add remainin' ingredients. Cowre an’ cuik oan high fur 10 hoors, ur until th' beans ur tender.

If usin' chicken, remove, discard bones an' return chicken tae chili.

E'en better th' next day.

Naay’s – Hot Slaw

Ingredients:

• 1 heed green cabbage
• 1 tablespoon salt

• 1 cup finely shredded carrots

• 1 cup sugar
• 1 cup vinegar
• 2 tablespoons minced ginger
• 2 tablespoons finely shredded hot peppers or 1-½ teaspoons chile pepper flakes

Preparation:

Cut th' cabbage in half an' remove th' core. Cut th' cabbage very thin. Toss wi' salt in a large bowl an' place a plate wi' a weecht oan top fur abit 3 hoors. Drain cabbage in a colandar.

Place cabbage in a bowl an' add carrots. Combine th' remainin' ingredients tae make th' dressin'. Add th' dressin' an' toss tae coat. Cowre an' refrigerate fur at leest 3 hoors. Th' flavur becomes mair intense wi' time.

Thes slaw is great oan pulled pork sandwiches.

Naay’s – Aunt Leona’s Chicken Paprikash

Ingredients:

• 1 4 ur 5 poond chicken ur parts, cut up an’ washed
• 2 medium onions cut fine
• 4 tablespoons shortenin’
• 1 tablespoon paprika
• 1 tablespoon salt
• 1-½ cup water
• ½ green pepper, cut up

• 8 ounces coffee cream
• 2 tablespoons floor

• 4 eggs
• 3 cups floor
• 1 teaspoon salt
• ½ cup cold water

Preparation:

Saute onions, in shortenin', add seasonin'. Add chicken, saute abit 10 minutes. Add water, cowre an' simmer slowly until chicken is tender (abit 1/2 hoor).

Efter chicken is dain, tak' chicken oot an' make mixture ay cream an' floor tae thicken broth.

Mix th' eggs, floor, salt an' cold water wi' spoon ur by hain. Drop by spoon intae foo boilin' salted water. Cuik until dumplings rise tae top. Drain, rinse in cold water an' add tae gravy wi' chicken.

Naay’s – Aunt Elva’s Pumpkin Dump Cake

Ingredients:

• 1 29oz can pumpkin
• 1 cup sugar
• 1 teaspoon salt
• 3 eggs
• 3 teaspoons cinnamon
• 1 8oz can evaporated milk
• 1 yella’ cake mix
• 2 sticks butter
• 1 cup pecan halves

Preparation:

Grease 9x13 pan and preheat oven to 350°F.

Mix th' pumpkin, sugar, eggs, salt, milk, an' cinnamon. Poor th' mixture intae th' pan.

Sprinkle th' cake mix evenly ower th' pumpkin mixture. Melt th' butter. (I only use 1 stick.) Drizzle ower dry cake mix. Place th’ pecans halves oan top.

Bake fur 50-60 minutes, until a toothpick comes oot clean.

Naay's Recipes - Lazy Polenta

Naay’s – Lazy Polenta

Ingredients:

(fur polenta)
• 4 cups water
• 1 cup yella’ cornmeal
• ½ teaspoon salt
• Freshly grin black pepper
• ¼ cup unsalted butter
• 2/3 cup freshly grated parmesan cheese (optional)

(fur grits)
• 3 cups water
• 1 cup grits
• ½ teaspoon salt
• Freshly grin white pepper
• 3 tablespoons unsalted butter

Preparation:

It's "lazy", coz Ah use th' rice cooker.

Pit th' water in th' rice cooker. Add th' cornmeal/grits an' salt. Stir tae distribute evenly. Close cowre an' start th' rice cooker.

A coople times durin' th' cycle stir fur 5 tae 10 seconds, replace cowre.

At th' end ay th' cycle stir in butter until melted an' add cheese if used. Stir until it pulls awa' frae th' bowl an' is desired consistency.

Serve hot, ur poor intae a buttered pan tae cool an' gie firm. Cut intae pieces, broon in a pan an' serve wi' yer favorite spaghetti sauce an' parmesan cheese.

Naay’s – Sprootin’ Guide

Ingredients:

• seeds
• water
• jars

Preparation:

Sproots ur easy tae graw at haem, an' they ur guid fur ye tay.

Ah use wide mouth cannin' jars wi' screen in th' rings tae replace th' lids. Pint an' quart jars dependin' oan th' quantity bein' sprouted. Sprootin' bags can also be used.

Sproots can be groon tae greens fur salads an' sandwiches. They can also jist be sprooted tae release nutients an' used in cooked recipes.

Nuts ur sprooted tae release nutrients an' soften. They arenae sprooted until a root is visible.

Sproot one kin' ay seed per jar. If makin' mixtures in th' sam jar, choose seeds 'at will sprit in th' sam number ay days.

Pit th' seeds in th' jar an' fill th' jar tae 3/4 foo wi' water. Soak th' seeds fur th' recommended soak time.

Rinse an' drain. Efter rinsin’, a dish rack ur clean plantin' tray make an easy place tae tip th' jars tae drain. Cowre wi' a towel tae keep ‘em ay th' lecht...

Naay’s – Mac an’ Cheese

Ingredients:

• 4 tablespoons butter
• ¼ cup floor
• 4 cups milk, preheated
• 1 tablespoon mustard
• 1 tablespoon chili powder
• ¼ teaspoon grin red pepper
• 1 teaspoon salt, ur tae taste
• 1 poond elbaw macaroni
• 1 poond sharp cheddar cheese, shredded ur crumbled (ur mix sharp an’ jack)
• ¾ cup breed crumbs (abit tae slices)
• ¼ cup parmesan cheese, grated
• 1 poond ham, cubed (optional)

Preparation:

Thes isnae "Kraft" macaroni an' cheese, if 'at is whit ye ur lookin' fur.

Melt butter in a large saucepan. Stir in floor until smooth. Cuik, stirrin', ower law heat abit 3 min. Gradually whisk in hot milk until smooth. Cuik, stirrin' constantly ower law heat until thick an' smooth. Season wi' mustard, chili powder, red pepper an' salt.

Naay's Recipes - Nut Brittle

Naay’s – Nut Brittle

Ingredients:

• 2 cups sugar
• ½ cup water
• 1 cup lecht corn syrup

• 1 teaspoon butter
• 2 cups raw peanuts (ur a raw mixture ay peanuts, almonds, cashews, pumpkin seeds an’ sunflower seeds)

• 1 teaspoon vanilla
• 1-½ teaspoons soda

Preparation:

Mix sugar, syrup, water & cuik tae soft baa stage (235°F).

Add peanuts an’ butter an’ cuik until syrup turns a golden broon an’ becomes brittle when tested in cold water (295°F).

Tak' frae fire, add vanilla an’ soda an’ stir until it foams weel.

Poor quickly ower a greased tin, (a silpat liner works weel fur thes step).

When completely cool, break intae pieces an' stair in a closed container.

Naay’s – Kale Cheps

Ingredients:

• 6 cups kale (yoor guess as guid as mine, Ah filled a large salad bowl)

• ¼ cup olife oil
• ¼ cup apple cider vinegar
• ½ teaspoon salt
• 2 tablespoons lemon juice
• 1 clove garlic

• 2 tablespoons ‘herbes de provence’

Preparation:

Remove th' stems frae th' kale an' tear th' leaves intae big pieces. Place in large bowl an' sit aside.

Place aw th' remainin' ingredients, except th' herbs, in a blender an' blend until smooth. Add th' herbs lest an' briefly pulse until weel mixed.

Mix th' sauce wi' th' kale in a bowl. Use yer hans tae ensure th' kale is weel coated wi' th' sauce.

Place th' kale oan dehydratur trays in single layers, (Ah used mah fruit leaither liners, recipe filled mah 8 trays). Dehydrate at 115°F fur 4 hoors until dry, (mine waur crispy in under 3 hoors).

Naay’s – Split Pea Soop

Ingredients:

• 1 pound dried green split peas
• ½ large yella’ onion, diced
• 2 tatties, peeled an’ diced
• 2 carrots, diced
• 1 celery stalk, diced
• 2 cans broth (vegetable ur chicken)
• 2 cans water (frae th’ broth)
• 1 teaspoon kosher salt (Wi' most canned broth ye can skip th' salt.)
• 1/2 teaspoon black pepper
• 1 smoked ham hock ur smoked turkey drumstick

Preparation:

Pit th' peas, vegetables, broth, an' water in a 4-quart ur larger slaw cooker machine. Gie it a stir. Add th' salt an' pepper an' th' ham hock ur turkey leg.

Cowre an' cuik oan law fur 8 tae 10 hoors, ur oan high fur 4 tae 6 hoors. Add a half hoor fur each time ye gie curioos an' lift th' lid.

Remove th' ham hock ur turkey leg. Use a stick blender tae blend tae desired consistency. Ah loch tae leave some chunks. Scrap aw th' meat frae th' ham hock ur turkey leg an' return it tae th' soop, discardin’ th’ bones...

Naay’s – Gingerbread Dwarves

Ingredients:

Th’ Cookie
• 2 tablespoons dark molasses
• 1 tablespoon water
• 1 large whole eeg
• 3-¼ cup floor
• 1 teaspoon bakin’ soda
• ½ teaspoon salt
• 1-½ cups broon sugar (packed)
• 1-½ tablespoons grated orange zest
• 2 teaspoons grin cinnamon
• 1 tablespoon grin ginger
• ½ teaspoon grin cloves
• ¼ teaspoon grin nutmeg
• 1 cup (2 sticks) unsalted butter, cold (cut intae 16 pieces)

Th’ Icin’
• 2 cups sifted confectioner’s sugar (plus 2 tablespoons if needed)
• 2 large eeg whites (at room temperature)
• 1/3 teaspoon cream ay tartar

Preparation:

If ye dornt awreddy hae some, make cutters ay yer dwarves in yer favorite poses. Ye can make ‘em frae strips ay disposable aluminum pans ur cut ‘em frae thin cardboard.

Naay’s – Nut Milk
Ingredients:
• 3/4 cup raw nuts
• 1 to 3 tablespoons dried fruit (optional)
• 5 cups water
Preparation:
Ye will need a blender fur thes recipe.

Soak nuts an' fruit 12 tae 18 hoors in abit dooble th' amoont ay water tae jist cowre.

Strain, reservin' th' liquid. Add water tae reserved water tae make 5 cups total.

Blendtec ur Vitamix blender: Blend oan highest settin' wi' jist enaw ay th' water tae process fur 1 min. Add remainin' water. Blend anither 1 min oan high. Poor thru strainer intae pitcher.

Conventional blender: Blend oan highest settin' wi' jist enaw ay th' water tae process fur 3 min. Add 1 cup mair water an' blend anither 1 min. Add remainin' water. Blend jist tae combine. Poor thru strainer intae pitcher.

Any leftowre pulp in th' strainer main be saved tae add tae veggie patties ur breed recipes.

Ah usually use mostly almonds wi' a brazil nut, some cashews, sunflower seeds an' pumpkin seeds tae make th' 3/4 cup ay nuts...

Naay’s - Sauerkraut
Ingredients:
• 5 lb Cabbage (Abit tois medium heids.)
• Water

Seasoning
• 2 tablespoons brine salt (Ah use kosher salt.)
• 1 tablespoon caraway seed
• 1 teaspoon celery seed
Preparation:
Remove th’ cabbage hearts. Chop cabbage fine ur coarse, yer preference.

In a wee bowl combine th’ salt an’ seeds.

Ah use a #2 crock, but a gallon jar woods wark. Startin' wi' cabbage, layer a quarter ay th' cabbage 'en a quarter ay th' salt mixture. Alternate until dain. Pack doon th' cabbage as ye gang, (Ah use a tatter masher).

Cowre wi' th' largest plate 'at will fit inside yer crock. 'En add a weecht tae keep th' cabbage belaw th' liquid 'at will f'rm. Fresher cabbage will produce mair liquid. Ah use a gallon jar filled wi' water as a weecht fur mah crock.

Cowre wi' a towel. press doon oan th' weecht ance in a while. If efter 24 hoors thaur isnae enaw liquid tae be submerge th' cabbage an' plate, 'en add enaw salt water tae raise th' level...

Naay's Recipes - Spiced Naan

Naay’s – Spiced Naan
Ingredients:
• 4 cups floor (I use a mix ay 1-½ c chapatti, 1 c bread floor, ¼ c whole wheat floor, ¼ c fine cornmeal, 1/3 c chickpea floor, 2/3 c wheat flour – whatever combination ‘at ye loch, but at leest 1/3 shoods be white floor fur gluten content.)
• 1 tsp bakin’ powder
• ½ tsp salt
• 2-½ tsp yeast
• 1 tsp castur (superfine) sugar, (I use powdered sugar.)

• 1 tsp fennel seeds
• 2 tsp onion seeds
• 1 tsp cumin seeds
• 1 tbsp flax seeds

• 2/3 c hain hot milk (ur nut milk)
• 2 tbsp oil (I use extra virgin olife oil or walnut oil.)
• 2/3 c plain yogurt
• 1 eeg, beaten
• 1-2 garlic cloves, finely minced
• 1-2 tbsp cilantro, finely chopped
Preparation:
Sift dry ingredients together intae a large bowl. Add seeds tae dry ingredients.

Stir th’ wet ingredients together in a bowl ur large measurin’ cup...

Naay’s - Smoked Beef Briskit
Ingredients:
• 10 lb Briskit ay beef

Seasoning
• Equal parts kosher salt, coarsely grin black pepper, garlic granules, an’ paprika.

Marinade
• 2 cups beef stock
• ¼ cup olife oil
• ¼ cup red bucky vinegar
• ½ cup Worcestershire sauce
• 1 teaspoon dry mustard
• 1 bay leaf
• 1 teaspoon paprika
• 1 teaspoon garlic granules
• 1 teaspoon chili powder
• 1 teaspoon salt
• 1 teaspoon Tabasco sauce

Sauce
• 3-4 cups barbeque sauce
Preparation:
Stir ingredients fur seasonin’ together. Rinse an’ dry briskit. Thorooghly jeekit an’ rub seasonin’ intae meat; cowre an’ refrigerate overnecht (10-12 hoors).

Mix ingredients fur marinade together; cowre an’ refrigerate overnecht.

Smoke fur 12 tae 15 hoors, until fork tender. Turnin’ every thee hoors, an’ wuid if needed, an’ drizzlin’ wi’ marinade tae keep moist...
